Bacon Onion Jam with Bourbon

Instructions
- Cut the bacon into small pieces and cook until crispy, about 20 minutes.
- Remove the bacon and discard all but 1 tablespoon of the fat.
- Cook the onion and garlic until translucent, scraping up the crispy bits.
- Transfer the onion mixture to a crockpot and add the remaining ingredients.
- Let the mixture simmer on high for 2-3 hours until thick and bubbly.
- Pulse the mixture in a food processor or with a hand blender until smooth.
- Store in a jar and refrigerate for up to a week.
