Bacon Onion Jam with Bourbon

Ingredients

  • 12 oz sliced bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • ¼ cup cider vinegar
  • ¼ cup brown sugar
  • cup maple syrup
  • cup brewed coffee
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground ginger
  • 1 dash curry powder
  • 1 dash nutmeg (optional)
  • 1 tablespoon bourbon (optional)

Instructions

  1. Cut the bacon into small pieces and cook until crispy, about 20 minutes.
  2. Remove the bacon and discard all but 1 tablespoon of the fat.
  3. Cook the onion and garlic until translucent, scraping up the crispy bits.
  4. Transfer the onion mixture to a crockpot and add the remaining ingredients.
  5. Let the mixture simmer on high for 2-3 hours until thick and bubbly.
  6. Pulse the mixture in a food processor or with a hand blender until smooth.
  7. Store in a jar and refrigerate for up to a week.
