Sweet Onion Bacon Jam

brown sugar (or coconut sugar or Brown Swerve)

Instructions
- 1. Cook the chopped bacon in a large skillet over medium heat until crispy but still chewy, then transfer to a paper towel-lined plate.
- 2. Drain all but 2 tablespoons of bacon fat from the skillet.
- 3. Add the diced onions to the skillet and cook for about 10 minutes until caramelized.
- 4. Stir in the minced garlic, balsamic vinegar, brown sugar, and water.
- 5. Return the cooked bacon to the skillet and mix well.
- 6. Reduce heat to low and cook for an additional 10 to 15 minutes until the jam thickens.
- 7. Taste and adjust seasoning if necessary, then serve warm or at room temperature.
