Sweet Onion Bacon Jam

Ingredients

  • 1 pound thick-cut bacon, chopped into 1-inch pieces
  • 2 medium sweet onions, diced
  • 2 cloves garlic, minced
  • ¼ cup balsamic vinegar
  • cup brown sugar (or coconut sugar or Brown Swerve)
  • 1 tablespoon water

Instructions

  1. 1. Cook the chopped bacon in a large skillet over medium heat until crispy but still chewy, then transfer to a paper towel-lined plate.
  2. 2. Drain all but 2 tablespoons of bacon fat from the skillet.
  3. 3. Add the diced onions to the skillet and cook for about 10 minutes until caramelized.
  4. 4. Stir in the minced garlic, balsamic vinegar, brown sugar, and water.
  5. 5. Return the cooked bacon to the skillet and mix well.
  6. 6. Reduce heat to low and cook for an additional 10 to 15 minutes until the jam thickens.
  7. 7. Taste and adjust seasoning if necessary, then serve warm or at room temperature.
