Cranberry Jam

Ingredients

  • 1 lb. 2 ounces frozen or fresh lingonberries or cranberries
  • scant 1 cup caster (superfine) sugar
  • 1 small apple, peeled and cored
  • 1 lemon finely grated rind and juice
  • ½ cup water

Instructions

  1. Rinse the berries and drain them well, then combine them in a bowl with sugar and lemon juice, leaving overnight.
  2. Coarsely grate the apple and place it in a jam-making pan with the grated lemon rind.
  3. Strain the juice from the berries into the pan, adding two spoonfuls of berries and the water.
  4. Simmer the mixture for 20-30 minutes until the apple is soft and the mixture thickens.
  5. Add the remaining berries and heat through for 5-8 minutes.
  6. Pour the jam into sterilized jars, seal tightly, and cool before storing.
