Cranberry Jam

frozen or fresh lingonberries or cranberries

caster (superfine) sugar

apple, peeled and cored

lemon
finely grated rind and juice

Instructions
- Rinse the berries and drain them well, then combine them in a bowl with sugar and lemon juice, leaving overnight.
- Coarsely grate the apple and place it in a jam-making pan with the grated lemon rind.
- Strain the juice from the berries into the pan, adding two spoonfuls of berries and the water.
- Simmer the mixture for 20-30 minutes until the apple is soft and the mixture thickens.
- Add the remaining berries and heat through for 5-8 minutes.
- Pour the jam into sterilized jars, seal tightly, and cool before storing.
