Shrimp Tacos with Mango Cabbage Slaw

Ingredients

The shrimp

  • 1 lb large raw shrimp, thawed, peeled, and deveined
  • 1–2 tsp oil
  • ¼ tsp salt
  • ¼ tsp sugar
  • 1 tsp yellow curry powder
  • ½ tsp allspice
  • ½ tsp cinnamon
  • ½ tsp cumin
  • ½ tsp ground ginger
  • ¼ tsp cayenne or chipotle powder

The slaw and beans

  • 2 cups Mango Cabbage Slaw
  • 1 can Cuban Style Black Beans
  • 6-8 pieces toasted corn & flour tortillas (6-inches)
  • to taste Chipotle Mayo (optional)

Instructions

  1. Pat the shrimp dry and drizzle with oil.
  2. Mix spices, salt, and sugar in a bowl, then toss with the shrimp.
  3. Grill or pan-sear the shrimp until cooked, then squeeze lime over them.
  4. Serve shrimp in toasted tortillas with black beans and mango cabbage slaw.
  5. Optionally drizzle with chipotle mayo.
