Vegan Almond Flour Brownies

Ingredients

The brownie mixture

  • 2 units Bob's Red Mill Egg Replacer or flax eggs
  • ¾ cup brown sugar
  • ½ cup melted coconut oil or any neutral oil
  • ¼ cup water
  • 1 teaspoon pure vanilla extract
  • ¾ cup cocoa powder
  • 1 cup Bob's Red Mill Super Fine Almond Flour
  • ½ teaspoon sea salt
  • ¼ teaspoon baking soda
  • ¼ cup vegan chocolate chips

For garnish

  • to taste units coarse sea salt or sea salt flakes
  • to taste units melted chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, mix the vegan eggs, sugar, and oil until combined and fluffy.
  3. Add the water and vanilla extract, blending for another 2 minutes.
  4. Stir in the cocoa powder, almond flour, baking soda, and sea salt until fully combined.
  5. Mix in the chocolate chips if using.
  6. Pour the mixture into a greased or parchment-lined 8x8 square pan.
  7. Bake for 35 minutes, or 40-45 minutes for a cake-like texture.
  8. Allow to cool completely in the pan on a wire rack for at least 30 minutes.
  9. Slice into 16 pieces and optionally drizzle with melted chocolate and sprinkle with sea salt.
