Crispy Paprika Oven Fries

Ingredients

The fries

  • 6 large waxy-skinned potatoes, cut into ½-inch wide batons (~ 2 ½ lbs.)
  • 3 cloves garlic, peeled, crushed, and chopped

The seasoning

  • ½ teaspoon smoked paprika
  • 1 teaspoon paprika
  • ¼ cup extra-virgin olive oil
  • 2 tsp fine semolina, rice flour, or fine breadcrumbs
  • ½ teaspoon fine grain sea salt, plus more to taste
  • to taste freshly ground pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Boil salted water in a large saucepan, add potatoes and blanch for 5 minutes.
  3. Drain the potatoes and mix them in a bowl with garlic, paprikas, olive oil, semolina, salt, and pepper.
  4. Arrange the potatoes in a single layer on parchment-lined baking sheets.
  5. Roast for 30-40 minutes, flipping halfway through, until golden and crisp.
