Crispy Paprika Oven Fries

waxy-skinned potatoes, cut into ½-inch wide batons (~ 2 ½ lbs.)

Instructions
- Preheat the oven to 375°F.
- Boil salted water in a large saucepan, add potatoes and blanch for 5 minutes.
- Drain the potatoes and mix them in a bowl with garlic, paprikas, olive oil, semolina, salt, and pepper.
- Arrange the potatoes in a single layer on parchment-lined baking sheets.
- Roast for 30-40 minutes, flipping halfway through, until golden and crisp.
