Simple Green Salad

Ingredients

The salad

  • 2 small heads soft lettuce
  • 1 each Persian cucumber
  • ¼ cup shaved Parmesan cheese
  • ¼ cup microgreens
  • 1 each avocado
  • flaky sea salt optional

The roasted almonds

  • ½ cup raw almonds
  • ½ tablespoon tamari

The dressing

  • 1 recipe lemon vinaigrette

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toss the almonds with tamari and spread them on the baking sheet.
  3. Bake the almonds for 10 to 14 minutes until browned, then let them cool.
  4. In a large bowl, toss the lettuce with a few spoonfuls of the lemon vinaigrette.
  5. Add the cucumber, Parmesan, pepitas, avocado, and tamari almonds to the bowl.
  6. Drizzle with more dressing and top with microgreens.
  7. Season with flaky sea salt if desired.
