The roasted almonds

raw almonds

tamari
The dressing

lemon vinaigrette
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Toss the almonds with tamari and spread them on the baking sheet.
- Bake the almonds for 10 to 14 minutes until browned, then let them cool.
- In a large bowl, toss the lettuce with a few spoonfuls of the lemon vinaigrette.
- Add the cucumber, Parmesan, pepitas, avocado, and tamari almonds to the bowl.
- Drizzle with more dressing and top with microgreens.
- Season with flaky sea salt if desired.
