Instructions
- Prepare the dressing by mixing all dressing ingredients in a bowl or blender until combined, adjusting flavors as needed.
- In a serving bowl, add the mixed greens and top with baby tomatoes, shallot or onion, carrots, optional pomegranate arils or dried fruit, salt, pepper, and toasted seeds.
- Add the dressing to the salad and toss to coat, or serve on the side. Best when fresh.
