Ingredients

The salad

  • 1 box microgreens (about 2 cups)
  • 2 small red radishes, sliced thinly

The dressing

  • 2 tablespoons olive oil
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 teaspoon honey or maple syrup
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly-ground black pepper

Instructions

  1. Combine the microgreens and sliced radishes in a large bowl.
  2. In a small bowl or jar, combine the olive oil, lemon juice, honey or maple syrup, salt, and pepper. Shake or whisk to combine.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Serve immediately.
