Sesame Banana Bread

Ingredients

The bread

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • ¾ cup dark brown sugar
  • ¾ teaspoon baking soda
  • ½ teaspoon fine grain sea salt
  • 1⅓ cups toasted sesame seeds
  • cup extra-virgin olive oil
  • 2 large eggs
  • cups mashed very ripe bananas
  • ¼ cup plain whole milk yogurt
  • 1 teaspoon freshly grated lemon zest

The glaze

  • ½ cup sifted dark brown sugar
  • ½ cup confectioners' sugar
  • 4-6 teaspoons freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. In a large bowl, whisk together the flours, sugar, baking soda, and salt.
  3. Add 1 cup of sesame seeds to the dry mixture and combine well.
  4. In a separate bowl, mix the olive oil, eggs, mashed bananas, yogurt, and lemon zest.
  5. Pour the banana mixture into the flour mixture and fold until just combined.
  6. Transfer the batter to the prepared pan and bake for about 45 minutes.
  7. Let the bread cool in the pan for 10 minutes, then turn it out to cool completely.
  8. While cooling, prepare the glaze by whisking together the sugars and lemon juice.
  9. Once the bread is cool, drizzle the glaze on top and sprinkle with remaining sesame seeds.
