Sesame Tahini Banana Bread

Ingredients

  • 3 pieces ripe bananas
  • 1 ½ cups gluten-free flour
  • cup tahini
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 pieces eggs (or flax eggs)
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ½ cup coconut sugar
  • ¼ cup avocado oil (or melted coconut oil)
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 9 x 5 loaf pan with parchment paper, greasing it lightly with oil.
  3. If using flax eggs, prepare them and let sit for 10 minutes to thicken.
  4. In a blender, combine the bananas, eggs (if using), tahini, coconut sugar, and oil, and blend until just combined.
  5. Transfer the mixture to a bowl, add the flax egg (if using), and mix in the flour, salt, baking powder, baking soda, cinnamon, and sesame seeds until just combined.
  6. Pour the batter into the prepared loaf pan and sprinkle additional sesame seeds on top.
  7. Bake for 35-45 minutes, or until a toothpick comes out clean.
