Banana Bread with Sesame Seed Crust

Ingredients

Loaf Pan Prep

  • 1 teaspoon olive oil
  • 3-4 tablespoons sesame seeds

Banana Bread

  • cups ripe bananas (about 4 bananas)
  • cup olive oil, coconut, or grapeseed oil
  • ½ cup maple syrup
  • 2 eggs or flax eggs
  • 1 teaspoon vanilla
  • ¾ teaspoon sea salt
  • 1 teaspoon baking soda
  • ¼ cup brown sugar or coconut sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • 2 cups all-purpose flour

Optional Additions

  • ½ cup chopped walnuts or other nuts
  • 1 banana for the top
  • ½ cup chocolate chips

Tahini Maple Spread (optional)

  • 2 tablespoons Tahini Paste
  • 2 tablespoons Coconut Oil
  • 1 tablespoon Maple Syrup
  • 1 pinch sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the loaf pan by oiling it and sprinkling sesame seeds on the bottom and sides.
  3. In a large bowl, mash the bananas and then whisk in the oil, maple syrup, eggs, and vanilla.
  4. Mix in the salt, baking soda, brown sugar, ginger, cinnamon, and allspice until well combined.
  5. Whisk in the flour until just incorporated, then fold in nuts if using.
  6. Pour the batter into the prepared pan and optionally add banana slices on top.
  7. Bake for 50-55 minutes, or until a skewer comes out clean.
  8. Cool in the pan for about 20 minutes before transferring to a cooling rack.
  9. For the optional Tahini Maple Spread, mix all ingredients in a small bowl until smooth.
