Ingredients

The pudding

  • 1 cup raspberries, fresh or frozen
  • ½ cup almond milk (or other non-dairy milk of your choice)
  • ½ cup full fat coconut milk
  • ¼ cup chia seeds
  • 1 tbsp lemon juice
  • 1 tbsp pure maple syrup (or more or less, to taste)
  • ½ teaspoon pure vanilla extract
  • pinch ground cinnamon
  • pinch salt (Himalayan salt recommended)

Optional garnish

  • chilled full fat coconut milk
  • whole raspberries, fresh or frozen
  • unsweetened shredded coconut

Instructions

  1. Combine all ingredients except chia seeds in a blender and process until smooth.
  2. Add chia seeds and stir to incorporate, ensuring they remain whole.
  3. Divide the mixture into bowls or glasses and refrigerate overnight or for at least 8 hours.
  4. Garnish with coconut milk, raspberries, and shredded coconut before serving.
