Beef Noodle Casserole

Ingredients

  • 12 ounces egg noodles, uncooked
  • 2 teaspoons olive oil
  • 1 ¼ pounds lean ground beef
  • 1 medium onion, finely chopped
  • 2 teaspoons minced garlic
  • to taste salt and pepper
  • 16 ounces canned tomato sauce
  • 15 ounces canned diced tomatoes, drained
  • 2 teaspoons Italian seasoning
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped parsley
  • as needed cooking spray

Instructions

  1. 1. Boil salted water and cook the egg noodles according to package directions.
  2. 2. Preheat the oven to 400°F.
  3. 3. In a large pan, heat olive oil over medium-high heat.
  4. 4. Add ground beef and cook for 4-5 minutes, breaking it up with a spatula.
  5. 5. Add chopped onion and minced garlic, cooking for an additional 5 minutes until softened.
  6. 6. Season the mixture with salt and pepper.
  7. 7. Stir in tomato sauce, diced tomatoes, and Italian seasoning.
  8. 8. Drain the noodles and combine them with the beef mixture.
  9. 9. Pour the mixture into a greased 9x13 baking pan and top with shredded cheddar cheese.
  10. 10. Bake for 10-15 minutes until the cheese is melted and bubbly.
  11. 11. Sprinkle with parsley before serving.
