Beef Noodle Casserole

Instructions
- 1. Boil salted water and cook the egg noodles according to package directions.
- 2. Preheat the oven to 400°F.
- 3. In a large pan, heat olive oil over medium-high heat.
- 4. Add ground beef and cook for 4-5 minutes, breaking it up with a spatula.
- 5. Add chopped onion and minced garlic, cooking for an additional 5 minutes until softened.
- 6. Season the mixture with salt and pepper.
- 7. Stir in tomato sauce, diced tomatoes, and Italian seasoning.
- 8. Drain the noodles and combine them with the beef mixture.
- 9. Pour the mixture into a greased 9x13 baking pan and top with shredded cheddar cheese.
- 10. Bake for 10-15 minutes until the cheese is melted and bubbly.
- 11. Sprinkle with parsley before serving.
