Ground Beef Casserole

Instructions
- Cook the pasta according to package directions, salting the water before cooking.
- In a saucepan, sauté garlic, thyme, jalapeno, and smoked paprika in butter for about 1 minute.
- Add onions and cook for another minute.
- Add ground beef, salt, and pepper; cook until the meat is no longer pink.
- Sprinkle flour over the beef mixture and cook for 1-2 minutes.
- Add diced tomatoes and cook for 2-3 minutes.
- Stir in cooked pasta and evaporated milk, cooking for another minute until combined.
- Adjust seasonings as needed and stir in more than half of the cheese.
- Transfer to a greased baking dish and sprinkle remaining cheese on top.
- Bake uncovered at 350°F for 20-30 minutes until heated through and slightly browned.
- Let it rest for a few minutes before serving hot.
