Ingredients

The grain base

  • ¾ cup millet, uncooked
  • 1 ½ cups water

The toppings

  • 1 large banana, peeled, sliced
  • cup coarsely chopped peanuts
  • ¼ cup shredded coconut, unsweetened
  • 2 tablespoons maple syrup (optional)
  • 1 cup coconut milk beverage plain, unsweetened

Instructions

  1. 1. Bring water to a boil in a small pot.
  2. 2. Add millet, stir, return to a boil, reduce heat to simmer, and cook until tender (about 20 minutes).
  3. 3. While millet is cooking, prepare the toppings.
  4. 4. Drain any remaining water from the millet and fluff with a fork.
  5. 5. Divide the cooked millet among two bowls.
  6. 6. Top each bowl with sliced banana, peanuts, and shredded coconut.
  7. 7. Drizzle with maple syrup if desired.
  8. 8. Serve each bowl with coconut milk beverage and enjoy immediately.
