20-Minute Broiled Tomatoes with Parmesan

Ingredients

The tomatoes

  • 3 whole plum tomatoes

The topping

  • ½ tablespoon avocado oil
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon minced garlic
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Instructions

  1. Preheat the broiler to high.
  2. Line a rimmed baking sheet with foil and place the tomato halves cut side up.
  3. Brush the tomatoes with avocado oil.
  4. Broil the tomatoes for 8 to 10 minutes.
  5. In a small bowl, combine the Parmesan cheese, garlic, oregano, salt, and pepper.
  6. Sprinkle the cheese mixture over the tomatoes.
  7. Broil the tomatoes for an additional 3 minutes.
  8. Serve warm or at room temperature.
