Instructions
- Mix the dry ingredients for the pancakes in a large bowl.
- Add the wet ingredients to the same bowl, stir, and let the mixture rise for 2-3 minutes.
- Preheat a non-stick pan and spray with coconut oil.
- Spoon the batter into the pan and cook on medium heat until bubbles form on top, then flip and cook for another 2-3 minutes.
- For the simple syrup, combine white sugar, water, vanilla paste, and wild blueberries in a small saucepan and cook on low heat for 5-6 minutes, stirring often.
- Serve the pancakes hot with a drizzle of the simple syrup and any additional toppings.
