Ingredients

The dip

  • 1 can refried beans (15.5 oz)
  • Tbsp taco seasoning
  • 3 medium ripe avocados
  • 2 Tbsp fresh lime or lemon juice
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup sour cream
  • 1 cup thick and chunky salsa (optional)
  • 1 cup finely shredded cheddar cheese (4 oz)
  • 2 large Roma tomatoes (diced)
  • cup black olives (diced)
  • 2-3 green onions (diced)

Serving

  • 8 cups 9 oz cups

Instructions

  1. Mix refried beans with water and taco seasoning until desired consistency is reached.
  2. Mash avocados with lime juice, seasoning with salt and pepper.
  3. In each cup, layer the bean mixture, followed by the avocado mixture, sour cream, salsa (if using), cheese, tomatoes, black olives, and green onions.
  4. Store in the refrigerator and serve with tortilla chips.
