Ingredients

  • 2 large bananas
  • ¾ cup crushed pineapple
  • ¼ cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg
  • ¼ cup milk
  • 2 cups all purpose flour
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • 1-2 tablespoons rum

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a bowl, mash the bananas and mix with crushed pineapple and sour cream.
  3. Whisk in the eggs, milk, rum, and vanilla until smooth, then add the sugars.
  4. In another bowl, combine flour, baking powder, baking soda, nutmeg, and salt.
  5. Mix the melted butter into the dry ingredients, then gradually add the wet mixture.
  6. Mix for about 2 minutes until fully combined, scraping down the sides as needed.
  7. Pour the batter into the prepared loaf pan and bake for 60-75 minutes.
  8. Let the bread cool before slicing.
