Coconut Jelly

Ingredients

The jelly

  • 1 cup coconut water
  • teaspoons unflavored gelatin powder
  • cups full-fat coconut milk
  • ¼ cup honey
  • ½ teaspoon vanilla extract

Optional toppings

  • cups sliced fresh fruit

Instructions

  1. Bloom the gelatin by whisking it with ¼ cup of coconut water and set aside.
  2. In a saucepan, combine the remaining coconut water, coconut milk, and honey, and heat until the honey dissolves without boiling.
  3. Remove from heat and whisk in the bloomed gelatin and vanilla extract until smooth.
  4. Strain the mixture through a fine mesh sieve to remove lumps.
  5. Divide the mixture evenly into 6 small glass jars.
  6. Chill the jars uncovered in the fridge for 1 hour, then cover and chill until solid, about 4 hours.
  7. Top with fresh fruit before serving.
