Coconut Jelly
Ingredients

coconut water

unflavored gelatin powder

full-fat coconut milk

honey

teaspoon
vanilla extract

Instructions
- Bloom the gelatin by whisking it with ¼ cup of coconut water and set aside.
- In a saucepan, combine the remaining coconut water, coconut milk, and honey, and heat until the honey dissolves without boiling.
- Remove from heat and whisk in the bloomed gelatin and vanilla extract until smooth.
- Strain the mixture through a fine mesh sieve to remove lumps.
- Divide the mixture evenly into 6 small glass jars.
- Chill the jars uncovered in the fridge for 1 hour, then cover and chill until solid, about 4 hours.
- Top with fresh fruit before serving.
