Chocolate Prune Truffles

prunes, pitted

tart cherry juice

chocolate chips, melted

unsweetened shredded coconut
Instructions
- Soak prunes in cherry juice for 1-2 hours.
- If prunes are hard, heat them slightly in the cherry juice until soft.
- Blend soaked prunes and juice in a food processor until smooth.
- Add vanilla and melted chocolate to the mixture and pulse to combine.
- Transfer the mixture to a bowl and freeze for 30-45 minutes until firm.
- Roll the mixture into 1-inch balls and coat them in shredded coconut.
- Serve the truffles.
