Chocolate Prune Truffles

Ingredients

  • 1 cup prunes, pitted
  • ¾ cup tart cherry juice
  • 1 tablespoon vanilla extract
  • ½ cup chocolate chips, melted
  • ¾ cup unsweetened shredded coconut

Instructions

  1. Soak prunes in cherry juice for 1-2 hours.
  2. If prunes are hard, heat them slightly in the cherry juice until soft.
  3. Blend soaked prunes and juice in a food processor until smooth.
  4. Add vanilla and melted chocolate to the mixture and pulse to combine.
  5. Transfer the mixture to a bowl and freeze for 30-45 minutes until firm.
  6. Roll the mixture into 1-inch balls and coat them in shredded coconut.
  7. Serve the truffles.
