Cinnamon Streusel

Instructions
- Preheat the oven to 350°F.
- Grease a 12-cup muffin tin.
- In a bowl, whisk together milk, eggs, mashed bananas, honey, vanilla, flax seed, and cinnamon.
- Add cubed challah bread and chocolate chips to the mixture and gently toss.
- Divide the mixture among muffin cups and pour any remaining liquid over them.
- Cover with plastic wrap and refrigerate for 30 minutes to overnight.
- Make the streusel by mixing butter, brown sugar, flour, walnuts, and cinnamon until crumbly.
- Remove muffins from the fridge, sprinkle with streusel, and bake for 25-35 minutes until golden.
- Let cool for 5 minutes, then loosen edges and remove from the tin.
- Serve with maple syrup, butter, and bananas if desired.
