Ingredients

The muffins

  • cups milk
  • 4 large eggs
  • 3 very ripe bananas, mashed
  • 2 tablespoons honey
  • 1 tablespoon vanilla
  • 2 tablespoons ground flax seed meal (optional)
  • 1 teaspoon cinnamon
  • 8-10 cups cubed challah bread
  • 1 cup semi-sweet or dark chocolate chips (optional)
  • pure maple syrup, butter + bananas for serving

Cinnamon Streusel

  • ¼ cup brown sugar
  • ¼ cup butter, cut into cubes
  • ¼ cup flour
  • ¼ cup walnuts, chopped
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 12-cup muffin tin.
  3. In a bowl, whisk together milk, eggs, mashed bananas, honey, vanilla, flax seed, and cinnamon.
  4. Add cubed challah bread and chocolate chips to the mixture and gently toss.
  5. Divide the mixture among muffin cups and pour any remaining liquid over them.
  6. Cover with plastic wrap and refrigerate for 30 minutes to overnight.
  7. Make the streusel by mixing butter, brown sugar, flour, walnuts, and cinnamon until crumbly.
  8. Remove muffins from the fridge, sprinkle with streusel, and bake for 25-35 minutes until golden.
  9. Let cool for 5 minutes, then loosen edges and remove from the tin.
  10. Serve with maple syrup, butter, and bananas if desired.
