Instructions
- Heat a saucepan over medium-high heat and combine coconut sugar, pumpkin puree, pumpkin pie spice, oat milk, and water. Whisk until mixed.
- Bring the mixture to a boil, then reduce heat to medium and let it simmer for 10 minutes, whisking occasionally. Stir in vanilla and let cool for 30 minutes.
- Prepare the cold foam by frothing all the cold foam ingredients together until very foamy.
- To make the latte, add 2 tablespoons of the syrup to a glass, fill with ice, and pour in the coffee. Mix well and top with cold foam.
