Ingredients

Pumpkin Spice Syrup

  • 1 cup coconut sugar
  • cup pumpkin puree
  • 1 tbsp pumpkin pie spice
  • ½ cup oat milk or creamer
  • ½ cup water
  • 1 tsp vanilla

Coffee Base

  • 1.5 cups coffee

Pumpkin Spice Cold Foam

  • ¼ cup creamer
  • ½ tbsp pumpkin puree
  • ½ tsp pumpkin pie spice
  • 1 tbsp maple syrup
  • ½ tsp vanilla

Instructions

  1. Heat a saucepan over medium-high heat and combine coconut sugar, pumpkin puree, pumpkin pie spice, oat milk, and water. Whisk until mixed.
  2. Bring the mixture to a boil, then reduce heat to medium and let it simmer for 10 minutes, whisking occasionally. Stir in vanilla and let cool for 30 minutes.
  3. Prepare the cold foam by frothing all the cold foam ingredients together until very foamy.
  4. To make the latte, add 2 tablespoons of the syrup to a glass, fill with ice, and pour in the coffee. Mix well and top with cold foam.
