Easy Pumpkin Hummus with Roasted Garlic

For the Stuffed Figs

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment.
- Prepare the garlic by cutting off the top and drizzling with olive oil, then cover with foil and bake for 30-40 minutes until soft.
- Once baked, cool the garlic and remove the cloves.
- In a food processor, combine the roasted garlic, chickpeas, pumpkin, tahini, maple syrup, lemon juice, thyme, and salt, and blend until smooth.
- Gradually add olive oil and cold water until the desired consistency is reached.
- For the figs, preheat the oven to broil, trim stems, and cut an 'X' in the tops.
- Stuff each fig with a walnut chunk and vegan feta, then broil for about 5 minutes until the cheese is soft.
- Serve the hummus with Simply7 Chips and enjoy.
