Easy Pumpkin Hummus with Roasted Garlic

Ingredients

For the Roasted Garlic

  • 1 large bulb garlic
  • 2 tbsp olive oil

For the Pumpkin Hummus

  • 3-4 cloves roasted garlic
  • 1 can chickpeas, drained and rinsed
  • cup pumpkin puree, unsweetened
  • 1 heaped tbsp tahini
  • 1 tbsp maple syrup or honey
  • 1 tbsp lemon juice
  • 1 tsp finely chopped fresh thyme
  • to taste seasoning salt
  • 2 tbsp olive oil
  • 2 tbsp ice-cold water

For the Stuffed Figs

  • 10-12 fresh figs
  • 1 tsp vegan feta per fig
  • 10-12 small chunks walnuts
  • to taste Simply7 Lightly Salted snacks, crumbled
  • to taste honey optional

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment.
  2. Prepare the garlic by cutting off the top and drizzling with olive oil, then cover with foil and bake for 30-40 minutes until soft.
  3. Once baked, cool the garlic and remove the cloves.
  4. In a food processor, combine the roasted garlic, chickpeas, pumpkin, tahini, maple syrup, lemon juice, thyme, and salt, and blend until smooth.
  5. Gradually add olive oil and cold water until the desired consistency is reached.
  6. For the figs, preheat the oven to broil, trim stems, and cut an 'X' in the tops.
  7. Stuff each fig with a walnut chunk and vegan feta, then broil for about 5 minutes until the cheese is soft.
  8. Serve the hummus with Simply7 Chips and enjoy.
