Ingredients

The eggs

  • 6 large eggs

The filling

  • 3 tbsp plain Greek yogurt
  • 1 tsp Dijon mustard
  • ΒΌ tsp Worcestershire sauce
  • 1 tbsp pickle relish
  • to taste salt
  • to taste pepper

The garnish

  • optional smoked paprika
  • optional fresh chopped chives

Instructions

  1. Boil the eggs in a large saucepan covered with an inch of water for about 30 seconds, then turn off the heat and let them sit covered for 12 minutes.
  2. Prepare an ice bath while the eggs sit, then transfer the eggs to the ice bath for about 10 minutes to cool.
  3. Peel the eggs and slice them in half lengthwise, removing the yolks into a bowl.
  4. Mix the yolks with Greek yogurt, Dijon mustard, Worcestershire sauce, relish, salt, and pepper until well combined.
  5. Pipe or spoon the filling back into the egg whites.
  6. Garnish with smoked paprika and chives before serving.
