Ingredients

The fruit

  • 2 ½ - 3 cups ripe or slightly over-ripe diced fruit

The sweetener

  • to taste sweetener (honey, sugar, agave, etc.)

The flavorings

  • 2 teaspoons fresh lemon juice
  • to taste optional seasonings, spices, extracts

Instructions

  1. Preheat the oven to the lowest temperature (140°F or higher).
  2. Puree all ingredients in a food processor until smooth.
  3. Pour the mixture onto a baking sheet lined with plastic wrap or a silicone baking mat, spreading it to about 1/8" thick.
  4. Place the baking sheet in the oven and bake for 6-8 hours until the center is not tacky.
  5. Remove from the oven and peel off the fruit roll-up from the baking sheet.
  6. Cut into strips and roll them in parchment or plastic wrap.
  7. Store in an airtight container or freeze.
