Air Fryer Twice Baked Potatoes

Ingredients

The potatoes

  • 4 small russet potatoes (6 to 8 ounces each)
  • 2 tbs olive oil
  • salt to taste salt
  • pepper to taste pepper

The filling

  • 1 cup cheddar cheese, shredded
  • 4 pieces bacon, cooked and chopped finely
  • 1 tbs butter
  • ½ cup sour cream
  • 2 tbs chopped chives

Instructions

  1. Pierce the potatoes several times with a fork and spread olive oil on them, sprinkling with salt and pepper.
  2. Place the potatoes in the air fryer and cook at 400°F for 20 minutes.
  3. Flip the potatoes and cook for an additional 15 minutes, checking for doneness with a toothpick.
  4. Once cooked, let the potatoes cool slightly, then cut them in half and scoop out most of the filling into a bowl.
  5. Mix the scooped potato with cheese, bacon, butter, sour cream, and chives, then mash together.
  6. Return the filling to the potato skins and place them back in the air fryer for 5 more minutes.
  7. Serve warm, optionally topped with extra cheese, bacon, or chives.
