Air Fryer Twice Baked Potatoes
Ingredients
The potatoes

russet potatoes (6 to 8 ounces each)

The filling

cup
cheddar cheese, shredded

pieces
bacon, cooked and chopped finely

butter

cup
sour cream

chopped chives
Instructions
- Pierce the potatoes several times with a fork and spread olive oil on them, sprinkling with salt and pepper.
- Place the potatoes in the air fryer and cook at 400°F for 20 minutes.
- Flip the potatoes and cook for an additional 15 minutes, checking for doneness with a toothpick.
- Once cooked, let the potatoes cool slightly, then cut them in half and scoop out most of the filling into a bowl.
- Mix the scooped potato with cheese, bacon, butter, sour cream, and chives, then mash together.
- Return the filling to the potato skins and place them back in the air fryer for 5 more minutes.
- Serve warm, optionally topped with extra cheese, bacon, or chives.
