Ingredients

Sweet Potato Wedges

  • 5 medium sweet potatoes
  • 2-3 tablespoons oil
  • ½ teaspoon coarse salt
  • ¼ teaspoon ground black pepper

Spice Mixtures

  • ¾ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • 1 tablespoon garam masala
  • ¼ teaspoon ground turmeric
  • 1 tablespoon Italian seasoning

Garlic Aioli

  • ¼ cup mayonnaise
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • to taste coarse salt
  • to taste ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Place sweet potato wedges on a greased baking sheet and toss with oil, salt, and pepper.
  3. Choose a spice combination and whisk together in a bowl until combined. Add spice mixture to the oiled sweet potato wedges and toss to coat.
  4. Roast for 35-40 minutes, until soft on the inside and crispy on the outside.
  5. While the sweet potatoes roast, whisk together aioli ingredients until combined and refrigerate until ready to use.
  6. Serve the spice-roasted sweet potato wedges with garlic aioli for dipping.
