Instructions
- Preheat the oven to 400°F.
- Place sweet potato wedges on a greased baking sheet and toss with oil, salt, and pepper.
- Choose a spice combination and whisk together in a bowl until combined. Add spice mixture to the oiled sweet potato wedges and toss to coat.
- Roast for 35-40 minutes, until soft on the inside and crispy on the outside.
- While the sweet potatoes roast, whisk together aioli ingredients until combined and refrigerate until ready to use.
- Serve the spice-roasted sweet potato wedges with garlic aioli for dipping.
