Classic Roasted Sweet Potato Wedges

Ingredients

The potatoes

  • 2 large sweet potatoes

The seasoning

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs of your choice
  • as desired freshly ground black pepper
  • as desired sea salt

Instructions

  1. Preheat the oven to 375°F.
  2. Peel and slice the sweet potatoes into strips about 1-inch thick.
  3. Place the sweet potato strips on a baking sheet.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Sprinkle with minced garlic and herbs.
  6. Season with black pepper and salt as desired.
  7. Toss to distribute the seasonings, oil, and vinegar.
  8. Bake for about 30 minutes until golden brown and tender.
  9. Serve immediately.
