Ingredients

  • 1 ¼ cup almond flour
  • 1 cup creamy peanut butter
  • ¼ cup coconut oil
  • cup canned pumpkin
  • ¾ cup coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ tablespoons pumpkin pie spice
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Line an 8x8 or 9x9 baking dish with parchment paper and oil the inside.
  3. In a large bowl, whisk together the peanut butter, softened coconut oil, pumpkin, coconut sugar, egg, and vanilla until well mixed.
  4. Add the pumpkin pie spice, baking soda, salt, and almond flour, mixing until fully combined.
  5. Stir in about ¾ cup of the chocolate chips, reserving the rest for topping.
  6. Pour the batter into the baking dish and spread it evenly.
  7. Sprinkle the remaining ¼ cup of chocolate chips on top.
  8. Bake for 27-30 minutes.
  9. Let cool completely before slicing into squares.
