Lighter Caramel 7-Layer Bars

Ingredients

The crust

  • 10 full sheets honey graham crackers
  • 3 large egg whites

The toppings

  • 6 tablespoons unsweetened shredded or desiccated coconut
  • ½ cup miniature chocolate chips
  • ¼ cup finely chopped pecans
  • 6 squares caramel candy
  • 4 ounces fat-free sweetened condensed milk
  • ¼ cup plain nonfat Greek yogurt
  • 1 tablespoon granulated sugar (or sugar substitute)

Instructions

  1. Preheat the oven to 350°F and coat a 9-inch square pan with nonstick cooking spray.
  2. Break the graham crackers into pieces and pulse into fine crumbs in a food processor.
  3. Mix the crumbs with egg whites until fully incorporated and press into the bottom of the prepared pan.
  4. Sprinkle the coconut, chocolate chips, and pecans over the crust.
  5. Melt the caramel squares in the microwave and drizzle over the toppings.
  6. In a bowl, mix the sweetened condensed milk, Greek yogurt, and sugar, then drizzle over the bars.
  7. Bake for 18-20 minutes until golden, then cool completely and refrigerate for at least 3 hours before slicing.
