Ingredients

Cookie Base

  • 2 cups old fashioned oatmeal
  • 2 cups all-purpose flour
  • ¾ cup light brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 1 cup canola oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup semi-sweet chocolate chips
  • 1 ounce dulce de leche (warmed)

Remaining Layers

  • 1⅓ cups flaked coconut (sweetened or unsweetened)
  • 1 cup semi-sweet chocolate chips
  • 1 ounce sweetened condensed milk
  • 1 cup roasted cashews
  • 1 cup dark chocolate (melted)

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 inch pan with parchment and non-stick spray.
  2. In a bowl, mix the oatmeal, flour, brown sugar, baking soda, salt, eggs, canola oil, and vanilla until a crumbly dough forms.
  3. Press ⅔ of the dough into the prepared pan.
  4. Spread the dulce de leche over the dough evenly.
  5. Sprinkle the remaining dough over the dulce de leche layer.
  6. Bake for 15-20 minutes until just set.
  7. Remove from the oven and add coconut and semi-sweet chocolate chips on top.
  8. Drizzle sweetened condensed milk over the top and add cashews.
  9. Return to the oven and bake for another 25 minutes until golden brown.
  10. Drizzle melted dark chocolate over the bars and cool for at least 2 hours before cutting.
