Mocha Chip Biscotti

Ingredients

Biscotti

  • 2 cups + 2 Tablespoons all-purpose flour
  • 1 Tablespoon unsweetened cocoa powder
  • 1 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup unsalted butter
  • 3 large eggs
  • 2 Tablespoons instant coffee
  • 1 Tablespoon canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup mini chocolate chips
  • 1 large egg (for wash)
  • 1 Tablespoon milk (for wash)

Topping

  • ½ cup chopped hazelnuts
  • 8 ounces semi-sweet chocolate

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  2. In a large bowl, whisk together flour, cocoa powder, brown sugar, baking powder, cinnamon, and salt.
  3. Cut in the cold butter until crumbly.
  4. In another bowl, mix eggs, instant coffee mixture, oil, and vanilla.
  5. Combine the wet and dry ingredients, then fold in chocolate chips.
  6. Knead the dough lightly and shape it into two logs on the baking sheet.
  7. Brush the logs with egg wash and bake for 25-26 minutes.
  8. Cool for 10 minutes, then slice into 1-inch pieces and bake again for 9 minutes on each side.
  9. Melt chocolate and dip one side of each biscotti, then sprinkle with hazelnuts.
  10. Let the chocolate set before serving.
