Charcoal-Grilled Shrimp Skewers

Ingredients

The shrimp

  • 1 ½ pounds extra-large shrimp (21/25), peeled and deveined, tails left on

The seasoning and sauce

  • 2 - 3 tablespoons olive oil for brushing skewers
  • ¼ teaspoon sugar
  • 1 Charmoula Sauce for Shrimp Skewers
  • to taste salt and pepper
  • as needed lemon wedges for serving

Instructions

  1. Pat the shrimp dry and thread them onto skewers, alternating the direction of heads and tails.
  2. Brush both sides of the shrimp with olive oil, season with salt and pepper, and sprinkle sugar on one side of each skewer.
  3. Prepare the charcoal grill and heat until the coals are covered with ash.
  4. Place a disposable aluminum pie plate with sauce ingredients on the hot side of the grill and heat for about 1.5 minutes.
  5. Grill the shrimp skewers on the hot side until lightly charred, about 4 to 5 minutes, then flip and grill the other side for 1 to 2 minutes.
  6. Carefully lift the skewers from the grill and slide the shrimp into the pie plate with the sauce.
  7. Toss the shrimp with the sauce and return the pie plate to the hot side of the grill, cooking until the shrimp are opaque, about 30 seconds.
  8. Remove from the grill, add any remaining sauce ingredients, toss, and serve immediately with lemon wedges.
