Ingredients

The BBQ Beef

  • 2 ¾ – 3 pounds boneless beef chuck roast
  • 1 tablespoon avocado oil or olive oil
  • 1 large yellow onion
  • 1 6-ounce can tomato paste
  • 2 tablespoons Dijon mustard
  • 1 ½ tablespoons apple cider vinegar
  • ½ cup water
  • 2 teaspoons garlic powder
  • 1 ½ teaspoons dried oregano
  • 2 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon fine salt
  • ½ teaspoon black pepper

The Coleslaw

  • 1 9-ounce bag coleslaw mix
  • cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • ¼ teaspoon garlic powder
  • to taste salt and black pepper

Instructions

  1. Place sliced onions at the bottom of the slow cooker.
  2. Cut the beef roast into 3 chunks and sear in a skillet with oil until browned.
  3. Transfer the seared beef to the slow cooker over the onions.
  4. Mix the BBQ sauce ingredients in a bowl and pour over the beef.
  5. Cover and cook on LOW for 8-10 hours until the beef is tender.
  6. Shred the beef with forks and mix with the sauce and onions.
  7. For the coleslaw, combine the coleslaw mix with the dressing ingredients and toss well.
