Slow Cooker BBQ Beef

Ingredients

The beef and cooking base

  • ½ lb chuck roast
  • 2 tbsp ghee (or coconut oil for dairy free)
  • 1 onion, diced
  • Sea salt and pepper

The BBQ sauce

  • 1 cup coconut aminos
  • ½ cup tomato paste
  • ¼ cup white vinegar
  • 2 tbsp mustard
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika

Instructions

  1. Cut the roast into 4 pieces and season with salt and pepper.
  2. Chop the onion and place it in the slow cooker.
  3. In a bowl, whisk together all the BBQ sauce ingredients.
  4. Refrigerate half of the sauce for later use.
  5. Heat ghee in a skillet over medium heat and sear the roast pieces on all sides.
  6. Place the beef on top of the onions in the slow cooker and pour the remaining BBQ sauce over it.
  7. Cover and cook on low for 8-10 hours.
  8. Once cooked, shred the beef and mix it with the onions and sauce.
