Pear Spinach Salad

Ingredients

Vinaigrette

  • ½ cup olive oil
  • cup fresh cranberries
  • ½ - 1 tsp orange zest
  • 2 Tbsp fresh orange juice
  • 1 Tbsp honey
  • 1 Tbsp granulated sugar
  • 2 tsp dijon mustard
  • ½ tsp salt

Salad

  • 5 oz baby spinach
  • 2 count Bartlett pears (semi-firm but ripe), cored and sliced
  • ¾ cup pomegranate arils
  • ¾ cup chopped pecans
  • cup crumbled goat cheese (optional)

Instructions

  1. Prepare the vinaigrette by combining all vinaigrette ingredients in a food processor and pulse until cranberries are pureed.
  2. Transfer the dressing to a jar, cover, and chill until ready to use.
  3. Layer the salad ingredients in a bowl.
  4. Drizzle the desired amount of dressing over the salad or serve it on the side.
  5. Serve immediately.
