Ingredients

The scallops

  • 1 pound raw scallops

The seasoning

  • 1 teaspoon olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper

Optional garnish

  • to taste fresh lemon slices

Instructions

  1. Preheat the smoker to 225 degrees.
  2. Drizzle the scallops with olive oil and sprinkle the spices over them, rubbing the spices in.
  3. Load the scallops (and optional lemon slices) onto skewers or into a cast iron skillet.
  4. Smoke the scallops for 45 minutes to an hour, checking for doneness.
  5. The scallops are done when they are opaque and have reached an internal temperature of 115-130 degrees.
  6. Cool before serving.
