Instructions
- Preheat the smoker to 225 degrees.
- Drizzle the scallops with olive oil and sprinkle the spices over them, rubbing the spices in.
- Load the scallops (and optional lemon slices) onto skewers or into a cast iron skillet.
- Smoke the scallops for 45 minutes to an hour, checking for doneness.
- The scallops are done when they are opaque and have reached an internal temperature of 115-130 degrees.
- Cool before serving.
