Gingered Pear Galette

Instructions
- Prepare the crust by mixing flour, sugar, and salt, then cutting in the butter until crumbly.
- Add ice-cold water and form the dough into a disc, then refrigerate for at least 1 hour.
- Prepare the pear filling by tossing the filling ingredients together in a bowl and refrigerating.
- Roll out the dough into a 12-inch circle on a floured surface and place it on a baking sheet.
- Arrange the pear filling in the center of the dough, leaving a 3-inch border.
- Fold the edges of the dough over the filling and brush with egg wash and sprinkle with coarse sugar.
- Chill the assembled galette for 15-20 minutes while preheating the oven to 400°F (204°C).
- Bake the galette for 30-35 minutes until the crust is golden brown, then cool for 10 minutes before serving.
