Gingered Pear Galette

Ingredients

Crust

  • cups all-purpose flour
  • 2 Tablespoons granulated sugar
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ¼ cup ice-cold water
  • 1 large egg (for egg wash)
  • 1 Tablespoon milk (for egg wash)
  • to taste optional coarse sugar

Filling

  • 4–5 cups pear slices
  • ¼ cup granulated sugar
  • 2 Tablespoons crystallized ginger, finely chopped
  • 2 Tablespoons all-purpose flour
  • 1 teaspoon lemon juice (or orange juice)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • a pinch salt

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt, then cutting in the butter until crumbly.
  2. Add ice-cold water and form the dough into a disc, then refrigerate for at least 1 hour.
  3. Prepare the pear filling by tossing the filling ingredients together in a bowl and refrigerating.
  4. Roll out the dough into a 12-inch circle on a floured surface and place it on a baking sheet.
  5. Arrange the pear filling in the center of the dough, leaving a 3-inch border.
  6. Fold the edges of the dough over the filling and brush with egg wash and sprinkle with coarse sugar.
  7. Chill the assembled galette for 15-20 minutes while preheating the oven to 400°F (204°C).
  8. Bake the galette for 30-35 minutes until the crust is golden brown, then cool for 10 minutes before serving.
