Ingredients

The galette

  • 1 pie crust rolled into a 10-inch round
  • ¼ cup raw pecans
  • 2 tablespoons all-purpose flour
  • ½ teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons honey
  • 2 yellow pears thinly sliced
  • 1 tablespoon fresh lemon juice

Honey glaze

  • 2 tablespoons honey
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375ºF and line a baking sheet with parchment paper.
  2. Roll out the pie crust into a 10-inch circle and refrigerate for 15 minutes.
  3. Process the pecans, flour, cardamom, cinnamon, and nutmeg in a food processor until finely chopped.
  4. Drizzle honey into the pecan mixture and combine without forming a dough.
  5. Toss the pear slices with lemon juice and sprinkle with cardamom and cinnamon.
  6. Spread the pecan mixture over the chilled pie crust, leaving a 1.5-inch border.
  7. Layer the pear slices on top of the pecan mixture, then fold the crust edges over the pears.
  8. Melt honey and butter together, then brush over the crust and pears.
  9. Bake for 15 minutes, rotate, and bake for another 15 minutes until golden brown.
  10. Let cool for 10 minutes, drizzle with honey, and serve.
