Chicken Bacon Ranch Pasta

Ingredients

The pasta

  • 8 ounces whole wheat shells pasta or similar short shape
  • 2 cups milk
  • 2 tablespoons all-purpose flour

The meat

  • 6 slices bacon
  • 1 ¼ pounds boneless, skinless chicken breasts

The vegetables and spices

  • 1 small yellow onion
  • ¾ teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill weed
  • ½ teaspoon ground black pepper
  • teaspoon cayenne pepper
  • 1 cup frozen peas

The creamy ingredients

  • cup plain Greek yogurt
  • ½ cup shredded Mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan

Optional

  • to taste chopped fresh parsley or chives

Instructions

  1. Cook the pasta in salted boiling water until al dente, reserving 1 cup of the cooking liquid.
  2. Whisk together ½ cup of milk and flour in a bowl.
  3. Cook the bacon in a pot until crispy, then remove and set aside, leaving some drippings in the pot.
  4. Sauté the onion in the drippings, then add the chicken and cook until done.
  5. Remove the chicken and onion from the pot, then add the spices and whisk in the milk mixture.
  6. Slowly add the remaining milk and simmer until thickened.
  7. Stir in the Greek yogurt and cheeses until melted.
  8. Add the pasta, chicken, onion, bacon, and peas, mixing well.
  9. Use reserved pasta water to adjust the sauce consistency as needed.
