Creamy Chicken and Bacon Pasta with Spinach

Ingredients

The main ingredients

  • 8 oz. boneless skinless Chicken Breast
  • 8 oz. cooked Pasta
  • 2 strips thick cut Bacon
  • 1 tbsp. Olive Oil
  • ½ cup finely chopped Onion
  • 2 cloves Garlic
  • ¼ cup Dry White Wine
  • ½ cup Heavy Cream
  • 2 cups packed Baby Spinach
  • ¼ cup finely shredded Parmesan Cheese
  • 1 tsp. fresh Lemon Juice

Seasonings

  • to taste Salt & Pepper
  • 1 tsp. Italian Seasoning
  • ¼ tsp. Crushed Red Pepper

Instructions

  1. Cut the chicken into small pieces and season with salt, pepper, and Italian seasoning. Let it rest.
  2. Boil the pasta in salted water until al dente, reserving ½ cup of pasta water before draining.
  3. Cook the bacon in olive oil until it starts to render, then add the chicken and cook until done.
  4. Transfer the chicken and bacon to a bowl and cook the onion in the remaining fat until softened. Add garlic and crushed red pepper.
  5. Pour in the white wine and cook until absorbed, then add spinach and cream, cooking until the spinach wilts.
  6. Combine the pasta, chicken, and bacon with the sauce, adding reserved pasta water if necessary.
  7. Finish with lemon juice and Parmesan, mixing well and adjusting seasoning to taste.
