Mint Matcha Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together almond flour, maple syrup, coconut oil, salt, matcha powder, peppermint extract, baking soda, and vinegar until smooth.
- Scoop tablespoon-sized amounts of dough onto the baking sheet, shaping them into cookie shapes and flattening them slightly.
- Bake for about 12 minutes until the edges are dry, then cool completely.
- Melt the chocolate chips in a double boiler and dip the cooled cookies halfway into the chocolate.
- Place the dipped cookies in the freezer for about 5 minutes to set the chocolate, then drizzle any remaining chocolate on top.
- Let the chocolate harden at room temperature before serving.
