Ingredients

The cookie dough

  • 2 cups blanched almond flour
  • ¼ cup pure maple syrup
  • 3 tablespoons melted coconut oil
  • teaspoon fine sea salt
  • 2 teaspoons matcha powder
  • ¼ teaspoon peppermint extract
  • ½ teaspoon baking soda
  • 1 teaspoon apple cider vinegar

Optional chocolate coating

  • ½ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together almond flour, maple syrup, coconut oil, salt, matcha powder, peppermint extract, baking soda, and vinegar until smooth.
  3. Scoop tablespoon-sized amounts of dough onto the baking sheet, shaping them into cookie shapes and flattening them slightly.
  4. Bake for about 12 minutes until the edges are dry, then cool completely.
  5. Melt the chocolate chips in a double boiler and dip the cooled cookies halfway into the chocolate.
  6. Place the dipped cookies in the freezer for about 5 minutes to set the chocolate, then drizzle any remaining chocolate on top.
  7. Let the chocolate harden at room temperature before serving.
