Banana Cake with Vanilla Bean Frosting

Instructions
- 1. Preheat the oven to 350°F and butter a 13 by 9-inch baking dish.
- 2. In a mixing bowl, cream together the sugar and butter, then mix in the sour cream and eggs, scraping down the bowl as needed.
- 3. Stir in the mashed bananas and vanilla extract, then add the flour, baking soda, and salt, mixing well.
- 4. Pour the batter into the prepared baking dish and bake for 33 to 38 minutes until a toothpick comes out clean.
- 5. Allow the cake to cool completely on a wire rack before frosting.
- 6. For the frosting, mix together the butter, powdered sugar, and vanilla bean seeds, then gradually add in the heavy cream until smooth and fluffy.
- 7. Spread the frosting over the cooled cake and store in the refrigerator until serving.
