Ingredients

The mousse

  • 8 ounces silken tofu
  • 15 ounces pumpkin puree
  • ¼ cup pure maple syrup
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • tsp ground cloves
  • tsp ground nutmeg
  • tsp salt

Optional toppings

  • 1 ounce dark chocolate
  • to taste whipped cream

Instructions

  1. Prepare the tofu by draining it for 15 minutes using a colander lined with paper towels.
  2. Blend the drained tofu, pumpkin puree, maple syrup, and spices in a food processor until smooth.
  3. Transfer the mixture to an airtight container and refrigerate for at least 4 hours to set.
  4. Serve the mousse in bowls or jars, topped with whipped cream and chocolate shavings.
