Ingredients

Tequila Shrimp Marinade

  • 2 tbsp Silver Tequila
  • 1 tbsp minced Garlic
  • 2 tbsp finely chopped Cilantro
  • 2 tbsp finely chopped Shallot
  • 1/8 tsp Cayenne
  • ½ tsp Chili Powder
  • ½ tsp Onion Powder
  • 2 tbsp Olive Oil
  • ½ tsp Lime Zest
  • pinch Salt
  • ½ lb Shrimp (cleaned and deveined)
  • 2 wedge Lime

Taco Assembly

  • to taste Arugula or chopped Romaine
  • to taste crumbled Cotija or Feta Cheese
  • to taste finely chopped Cilantro
  • to taste fresh Lime Wedges
  • 4 6" Tortillas (Corn or Flour)

Instructions

  1. Combine all marinade ingredients in a bowl.
  2. Add shrimp and toss to coat, then cover and refrigerate for 1 to 4 hours.
  3. Remove shrimp from the refrigerator and let it rest at room temperature for 15 minutes.
  4. Heat a pan over medium heat, add shrimp and marinade, and cook for 2-3 minutes per side until shrimp is pink and cooked through.
  5. Squeeze lime juice from wedges into the shrimp and stir.
  6. Serve immediately on warmed tortillas with desired toppings.
