Ingredients

The potatoes

  • 2 pounds new potatoes
  • 3 tablespoons high-heat oil
  • to taste none sea salt

The aioli

  • 2 medium avocados
  • 2 none lemons (juiced)
  • ¼ cup fresh dill
  • 2 cloves garlic
  • ½ teaspoon salt

Instructions

  1. 1. Boil a large pot of salted water and add the potatoes, cooking until soft (about 15 minutes).
  2. 2. Strain the potatoes and set them aside.
  3. 3. Preheat the oven to 425°F and prepare a baking sheet.
  4. 4. Smash each potato on the baking sheet, drizzle with oil, sprinkle with salt, and bake for 25-30 minutes until golden brown.
  5. 5. In a food processor, blend the aioli ingredients until smooth, adjusting texture with water or lemon juice as needed.
  6. 6. Serve the warm potatoes with the avocado aioli and fresh dill.
