Instructions
- 1. Boil a large pot of salted water and add the potatoes, cooking until soft (about 15 minutes).
- 2. Strain the potatoes and set them aside.

- 4. Smash each potato on the baking sheet, drizzle with oil, sprinkle with salt, and bake for 25-30 minutes until golden brown.
- 5. In a food processor, blend the aioli ingredients until smooth, adjusting texture with water or lemon juice as needed.
