Ingredients

The salad

  • 2 pieces English Cucumbers, diced
  • 1 large Avocado, diced
  • 2 tablespoons Cilantro or Parsley, chopped
  • 1 clove Garlic, mashed

The dressing

  • ¾ teaspoon Cumin
  • ¼ teaspoon Crushed Red Pepper Flakes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Apple Cider Vinegar
  • 1 piece Lime, juiced
  • ½ teaspoon Sea Salt
  • ½ teaspoon Black Pepper

Instructions

  1. Chop and dice the cucumber, avocado, cilantro, and parsley.
  2. Add the chopped ingredients to a large bowl.
  3. Add the remaining ingredients to the bowl and toss to combine.
  4. Serve immediately and store leftovers in an airtight container in the fridge for up to one week.
