Spicy Cucumber Salad

Ingredients

The salad

  • ½ large cucumber, thinly sliced in circles (or 2 mini cucumbers)
  • 1 large zucchini, thinly sliced in circles
  • 1 medium yellow squash, thinly sliced in circles
  • to taste none salt
  • 1 medium avocado
  • cup pumpkin seeds
  • 1-2 tsp everything but the bagel seasoning (optional)

The dressing

  • 1 medium jalapeno, stem and seeds removed
  • ½ cup cilantro, loosely packed
  • 2 none limes, juiced
  • cup olive oil
  • 1 ½ tbsp maple syrup or honey
  • 1 clove garlic
  • 1 tsp salt
  • ½ medium avocado

Instructions

  1. Strain cucumber, zucchini, and yellow squash slices with salt for 10 minutes to remove excess water.
  2. Blend all dressing ingredients until combined, adjusting seasoning as needed.
  3. After 10 minutes, press vegetables to remove more water.
  4. Combine vegetables and pumpkin seeds in a bowl, drizzle with dressing, and toss.
  5. Top with avocado slices and sprinkle with seasoning.
