Spicy Cucumber Salad

The dressing

jalapeno, stem and seeds removed

cilantro, loosely packed

Instructions
- Strain cucumber, zucchini, and yellow squash slices with salt for 10 minutes to remove excess water.
- Blend all dressing ingredients until combined, adjusting seasoning as needed.
- After 10 minutes, press vegetables to remove more water.
- Combine vegetables and pumpkin seeds in a bowl, drizzle with dressing, and toss.
- Top with avocado slices and sprinkle with seasoning.
